Taiwanese Fried Shrimp Balls

2/3 lbs raw shrimp (shelled)

1/2 tspn salt

1 oz lard

1/2 tspn rice wine

1/4 tspn black pepper

1/2 tspn sesame oil

1 egg white

1 tblspn corn starch

6 cups frying oil

 

1. Clean and devein shrimp, drain.

2. Add 1/2 tspn salt and mix. Smash shrimp and chop finely. Mix chopped shrimp and lard with rice wine, pepper, sesame oil, egg white and corn starch.

3. Combine these ingredients by mixing them for about 5 minutes in a bowl. This will produce a smooth paste.

4. Roll the paste into a ball using your palms. This is enough to make about 14 shrimp balls.

5. Heat oil until medium hot, then remove pan from flame and add shrimp balls to oil, one at a time. Replace pan over the flame (medium) and deep fry for about 3 minutes until each ball has expanded and turns light golden.

6. Remove, drain and serve on plate. Garnish with cucumber and carrot slices.
