Stir-friend Shrimp with Green Peas

1/2 lb fresh shrimp
1/4 tspn salt
1/2 tspn rice wine
1/2 egg white
2 tspn corn starch
1/2 cup green peas
6 1-inch sections green onion
6 slices ginger root
3 cups frying oil
1/4 tspn black pepper
1/4 tspn sesame oil
1 tblsp water

1. Rinse and remove shrimp from shell.

2. Drain and mix with salt, rice wine, egg white and corn starch. Let sit for 20 minutes.

3. Boil peas until tender. Remove and cool in cold water then drain.

4. Heat oil with medium flame, add shrimp and deep fry until the shrimp turns orange. Remove and drain.

5. Remove all but leave about 3 tblsp of oil in pan. Reheat and stir fry green oin with ginger until fragrant.

6. Add shrimp, peas and 1/2 tspn rice wine, 1/4 tspn salt, black pepper, sesame oil, water and 1/2 tspn corn starch. Toss lightly to mix ingredients.

Serves 6.
