Stir Fried Shrimp In Chili Sauce

2/3 lbs. raw shelled shrimp

1/4 tspn salt

1/2 tspn rice wine

1/2 egg white

2 tspn corn starch

1 egg yolk

6 cups frying oil

1/2 tblspn chopped onion

1/2 tblspn chopped ginger

1/2 tblspn chopped garlic

1/2 tblspn chopped hot red pepper

2 tblspn chopped green pepper

1 tblspn sugar

1 tblspn vinegar

1 tblspn tomato sauce

1 tblspn water



  • Rinse and devein shrimp. Mix with salt, rice wine, egg white and corn starch. Let sit for 20 minutes. Before deep frying, dip the shrimp in egg yolk and mix with the corn starch.
  • Heal oil and fry the shrimp over medium until color changes (about 1 minute). Drain and place on serving plate.
  • Reheat pan with 2 tblspn oil. Stir fry the onion, ginger, garlic, and peppers until fragrant, then add the sugar, vinegar, tomato sauce, walter and 1/4 tspn salt.
  • When mixture starts to boil, add in 1/2 tspn cornstarch and 1/2 tblspn water to thicken. Mix together then pour over shrimp.
