Stir Fried Cucumber
Author: F. Aldo 2 cucumbers
3 cups water
1/2 tblsp salt
1/2 tblsp rice wine
2 cups soup stock
1 tspn corn starch
1. Pare cucumbers thinly (retaining green colored meat), remove seeds and cut meat into bite size pieces.
2. Add pieces to water and salt, cook for 3 minutes over medium flame. Remove and drain.
3. Heat pan and 2 tblsp oil. Stir fry cucumber pieces briefly.
4. Add rice wine, soup stock and 1 tspn salt and cook for 10 minutes.
5. Add 1 tspn corn starch and 1 tblspn water to thicken.
Serves 6.
