Stir Fried Beef with Green Pepper
Author: F. Aldo 8 oz. flank steak or beef tenderloin
1 tblspn soy sauce
1 tspn rice wine
1/4 tspn baking soda
5 tblspn water
2 tspn corn starch
1 tablspn oil
6 green peppers
1/2 tblspn chopped green onion
1/2 tblspn chopped ginger root
1 tblspn chopped garlic
1 tblspn chopped fermented black beans
1/2 tspn sugar
1/4 tspn black pepper
1/2 tspn sesame oil
3 cups frying oil
1. Remove fat or any tough membrane from beef. Cut into shreds and mix with soy sauce, rice wine, baking soda, water, and corn starch. Soak for 1 hour.
2. Add 1 tblspn oil before frying to prevent meat from sticking together while frying.
3. Cut green pepper into shreds.
4. Mix green onion, ginger, garlic and black beans in a bowl. In a separate bowl, mix 1/2 tspn salt, sesame oil, 1/2 tspn sugar, 3 tblspn water, 1/4 tspn black pepper and 2 tspn corn starch.
5. Heat oil, deep fry beef slices over medium heat for 20 seconds until color changes. Remove and drain.
6. Stir fry in 1 tblspn oil the green pepper, adding 2 tblspn water as it fries until fragrant.
7. From the first bowl above, stir fry the ingredients in 4 tblspn oil until fragrant. Then add beef, green pepper, rice wine and the ingredients from the separante bowl above. Mix together quickly over high heat.
Serves 12.
