Steamed Pomfret
Author: Mr. Go 1 whole pomfret (about 300 grams)
1 tspn salt*
2 tblspn shredded pork loin (or ham)*
1 tblspn shredded Chinese mushroom*
2 tblspn shredded Chinese pickled mustard green (Szechuan mustard)*
1 tblspn shredded ginger*
1/2 tspn soy sauce**
1/4 tspn sugar**
1 tspn rice wine**
1/4 tspn black pepper
1/2 tspn sesame oil
2 tblspn shredded green onion
1. Rub fish with salt.
2. Mix ingredients marked with * and **, sprinkle on fish and place fish on a bamboo steamer (or any steamer that you use). Steam ten minutes over high heat until meat is tender.
3. Remove fish and place on a serving plate. Pour black pepper, sesame oil and green onion on top. Heat about 2 tblspn oil until very hot and pour over the green onion.
Serve.
