Spicy Fried Prawns

1-1/2 lbs prawns
6 cups oil
1 tblspn chopped garlic
1 tblspn chopped ginger
1 tblspn chopped green onion
1 tspn hot bean paste
1 tblspn rice wine
4 tblspn tomato sauce
1/2 tspn salt
1 tblspn sugar
3 tblspn water
1 tspn cornstarch
  • Cut antennae and legss from prawns, devein, rinse and drain.
  • Heat oil, deep-fry prawns for 2 minutes over high heat, remove and drain.
  • Leave 2 tblspn oil in pan, reheat and stir in garlic, ginger, green onion, bean paste, rice wine and tomato sauce for 1-1/2 minutes until fragrant.
  • Add prawns with salt, sugar, water and corn starch and when mixture begins to boil, add 1 tblspn oil and toss lightly to mix ingredients and coat prawns with the sauce.
  • Remove and serve.
