Spicy Bean Sprouts with Cucumber Shreds

2/3 lbs bean sprouts

1 tblspn dried shrimp

1 cup shredded cucumber

1 tspn soy sauce

1 tspn salt

1 tspn sugar

1 tspn sesame oil

1 tspn vinegar

 

1. Rinse bean sprouts and cut off bitter ends.

2. Rinse dried shrimp and separately blanch bean sprouts and dried shrimp in boiling water. Remove and drain.

3. Place cucumber shreds in a serving plate.

4. Arrange bean sprouts on top, sprinkle dried shrimp above bean sprouts.

5. Mix soy sauce, salt, sugar, sesame oil and vinegar, then pour all over and toss lightly.
