Shredded Pork With Sweet Bean Paste

2/3 lbs pork loin

1 tblspn soy sauce

3 tblspn water

1 tspn rice wine

2 tspn corn starch

3 cups frying oil

1-1/2 tblspn sweet bean paste (XO sauce may be substituted)

2 tspn sugar

1/2 cups shredded green onion

 

1. Remove any fat or fibrous membrance from pork loin. Shred and mix with the soy sauce, rice wine, water, and corn starch. Leave for 20 minutes.

2. Mix sweet bean paste with 1/2 tblspn rice wine, 1 tblspn soy sauce, and sugar.

3. Arrange shredded green onion on a serving plate.

4. Heat 3 cups of oil, deep fry pork loin over medium heat until the color changes. Remove and drain.

5. Leave about 3 tblspn of oil, reheat and add sweet bean paste mixture. Stir fry until fragrant and add shredded pork.

6. Add 1 tblspn oil and toss lightly to mix. Pour onto the green onion on serving plate.

7. Serves 6.
