Prawns On Toast

12 prawns (about 1-1/2 lbs)

2 stalks green onion

2 slices ginger root

1/4 tspn black pepper

1/2 tspn salt

1 tspn rice wine

6 slices white bread

4 egg whites

2 tblspn flour

1 tblspn corn starch

10 cups frying oil

1/2 tspn sesame seed

 

1. Remove shells from praws, leaving tail intact. Devein, rinse and drain.

2. Make a shallow vertical cut along the back side of each prawn. Pound prawns lightly to flatten.

3. Pound the green onion and ginger, mix along with the black pepper, salt and rice wine then mix into prawns. Let sit for 20 minutes.

4. Cut crusts from bread and cut each slice in half.

5. Beat egg white until stiff then mix with flour and corn starch until smooth.

6. Spread each piece of bread with a small amount of the egg white mixture.

7. When prawns have dried, place them flat on slices of bread, tail end up. Add more egg white mixture over prawn and use a spoon to smooth the mixture evenly over the surface, then sprinkle some sesame seeds.

8. Heat oil until medium hot. Place each shrimp toast in oil, shrimp side down and fry for about 1 minute over low heat. Turn pieces over and turn heat to high. Deep fry 1 more minute until golden brown.

Remove, drain and serve.

May be garnished with tomato, lettuce and onion.
