Jing Du Spareribs aka King Dao Spareribs
Author: F. Aldo Jing Du spareribs, also known as King To or King Dao spareribs is a regular in Cantonese cooking.
1-1/2 lbs small spareribs
6 cups frying oil
1/2 tblsp soy sauce
1/2 tspn salt
1 tspn sugar
1/2 tblspn rice wine
1/2 tblspn chopped garlic
3 tblspn corn starch
1 tblspn worcestershire sauce
1 tblspn tomato catsup
1/4 tspn sesame oil
2 tblspn water
1. Cut spareribs into 20 sections, mix with the soy sauce, salt, sugar, rice wine, chopped garlic and cornstarch.
2. Let sit for 20 minutes. Before deep frying, mix with 3 tblspn corn starch.
3. Heal oil for deep frying. Deep fry spareribs for 4 minutes over medium heat.
4.Remove and heat oil until very hot. Re-fry spareribs for 1 minute over high heat; remove and drain.
5. Heat worcestershire, catsup, 1 tblsp sugar, sesame oil and water until boiling.
6. Add spareribs and 1 tblsp oil. Toss lightly to coat spareribs with sauce; remove and drain.
Garnish with tomato slices.
Serves 12.
