Fresh Scallop Slices In Oyster Sauce
Author: Mr. Go 10 ozs fresh scallops
1 tblspn ginger wine
1 tspn baking soda
1/2 cup water
6 slices green onion
6 slices ginger root
3 cloves garlic, pounded
1/2 cups shredded ginger root
1/4 cup shredded green onion
1 tblspn chopped chili pepper
4 tblspn oyster sauce
2 tblspn soy sauce
1 tspn sesame oil
1/2 tspn corn starch
1. Cut scallops into paper-thin slices.
2. Mix with ginger wine, baking soda and water and soak for 1-1/2 hours. Drain and rinse scallops lightly, drain again.
3. Heat pan, add 3 tblspn oil, stir-fry green onion, ginger root and garlic until fragrant.
4. Add 1 tblspn rice wine and 5 cups water. Cook for 2 minutes over high heat. Remove with ingredients from #3 with a strainer and add scallop slices. Cook for 20 seconds and remove.
5. Arrange the shredded ginger, shredded green onion and shredded chili pepper on a plate and place scallop slices on top.
6. Boil oyster sauce, soy sauce, sesame oil, 2 tblspn water and corn starch, pour into a bowl and serve as a dipping sauce for the scallops.
