Fish Fillet in Tomato Sauce

2/3 lb grouper fillet (may also be replaced with haddock or flounder)

1 tspn salt

1/4 tspn black pepper

1/4 tspn sesame oil

1 tblspn corn starch

1 medium-sized onion

3 cups frying oil

6 1-in section green onion

6 slices ginger root

3 tblspn tomato sauce

1/2 tblspn sugar

2 tblspn water

 

1. Cut fillet into bite-size cubes and mix with salt, black pepper, sesame oil and corn starch. Let sit for 20 minutes.

2. Cut onion into bite-size pieces.

3. Heat oil for deep frying. Deep fry fish pieces and onion over medium heat for 1 minute. Remove and drain.

4. Leave about 1 tblspn oil in pan, reheat and stir-fry green onion and ginger until fragrant.

5. Add tomato sauce, sugar, 1 tspn sesame oil, 1 tspn corn starch and water and when liquid starts to boil, add fish and onion.

6. Mix together and add 1 tspn oil. Toss lightly and mix all ingredients and coat fish with the sauce. Serve.
