Bean Sprout and Spareribs Soup
Author: Mr. Go 4 ozs. spare ribs
9 cups water
2 slices ginger
6 ozs. bean sprouts
1 small tomato
2 tspn salt
1. Cut spareribs into bite-size pieces.
2. Blanch tomato in boiling water, remove skin and seeds, then dice.
3. Heat 2 tblspn oil, stir fry tomato for about 30 seconds and remove.
4. Add spareribs, ginger and water in a pan and heat until boiling. Reduce heat to low and simmer for 40 minutes.
5. Add bean sprouts, tomato slices and salt. Cook for another 20 minutes.
6. Serves 12.
